Blender Oat Pancakes

Who doesn't love everything about Pancakes? The fluffy, sweetness is in a class of its own!

But if you are like me its a choice I never make because they leave me feeling yucky.

Today I had a hankering for some. I was visualizing how they would taste before I was even finished my workout!

Now part of this is because I am lacking sleep and feel exhausted. When we don't get enough sleep its common for us to experience cravings for foods we don't typically have! This happens because our hunger hormones Leptin and Ghrelin are out of whack.

 

Ghrelin is a hormone that increases our appetite and that leads to hunger which then plays a role in our body weigh! Leptin decreases your appetite and sends the signal to your brain that you are full. So when the body is sleep deprived the level of ghrelin spikes, and the level of leptin falls, which leads to hunger and cravings!

I don't know many people who crave the comfort of salad- generally we want the comfort foods- like todays craving of pancakes!

So let's get back to the pancakes!

I am going to share the recipe I whipped up in my blender! As I mentioned above if I have regular pancakes I get bloated and feel terrible shortly after having them, which likely would have lead to more cravings and not so healthy choices.

I decided to use Gluten Free Oats! They are the star of this dish-(well maybe the Raspberries I put on top is the real star!)
 
Oats are a fantastic choice! They are a healthy grain, a great source of vitamins, minerals, fiber and antioxidants. The benefits of eating oats include weight loss, lower blood sugar levels and a reduced risk of heart disease!
 

Okay, I will stop blabbering and get on with the recipe!

You will need:

1 banana

2 eggs

11/2 cups Rolled Oats (I used Only Oats to guarantee they are gluten free-but did you know oats are naturally gluten free? Most oats are processed in factories that also process gluten so they get cross contaminated!)

1/4 cup Pure Maple Syrup

2tsp Baking Powder

1tsp Cinnamon

1tsp Vanilla

2tbsp Olive Oil

2tbsp Water

Instructions-

Mash banana. Throw all the ingredients into a blender. Blend until it turns into a batter.

Pour desired amount into hot frying pan. Cook until done.

Easy, right?
 

I chose to top mine with 1tbsp of Greek Yogurt and a handful of raspberries warmed up. I drizzled a bit of Maple Syrup on top. I am telling you this recipe is so delicious and its healthy and leaves you feeling full and satisfied without bloating!

 

*You can swap out the maple syrup for honey, or even applesauce.

*You could swap the eggs out for flax eggs to make it vegan.

*This could also be 2 servings- or if you are hungry go for the whole recipe like I did!!
