Peanut Butter Cacao Valentine Fatties
Feb 01, 2023Have you ever just needed a small morsel of sweetness and you are eating super clean and your pantry is void of your trigger snacks? Admit it!! I know I cant be alone!
I like to keep a supply of bite sized chocolate fatties in the freezer for those moments that I just NEED chocolate. Who relates? It's literally the end of the world in those precise moments and nothing but chocolate will suffice.
Today I decided to change it up a bit and seeing that its February and what I consider LOVE month I decided to be different and make Peanut Butter Cacao Valentine Fatties. Absolutely delicious and they even have health benefits!
Satisfying and supports my health- yes please!
Cacao Butter is the star of this recipe! Maybe you are wondering what it is- well let me tell ya! Cacao butter is the fat found in cocoa beans! It's used in most commercial chocolate and has a delicious flavour and texture!
It is also an extremely healthy fat! I love using this instead of coconut oil because they wont melt at room temperature!! So you can make these up and give them to your Valentine this month!
Cacao butter is high in vitamin D2, a precursor to the active form of vitamin D in the body. It’s also rich in minerals, such as potassium, phosphorus, iron, copper, and magnesium.
Consumption of cacao butter has been associated with reduced blood pressure and improved insulin resistance. So heck why not use this yummy fat!
I also used peanut butter but you can use any kind of nut butter. Honey goes so well with peanut butter so I decided to add some Raw Honey in too, vanilla and a pinch of sea salt!
I melted the cacao butter on a double boiler- this prevents burning and the cacao butter from "seizing" becoming grainy and paste like. Once it was melted I took it off the stove and removed from the double boiler.
Then I added in the other ingredients and I used an Immersion Blender because I wanted to make sure I was able to blend everything together thoroughly and quickly.
If you are wanting small bite sized fatties- then I recommend using Silicone Chocolate Molds these keep them the same size and you can choose different shapes- plus clean up is so easy as the fatties just pop out. I like to be efficient when doing these so I like using a chocolate dropper to fill the molds easily and without making a mess!
Ingredients you will need-
*180 grams cacao butter- I use a kitchen scale because the cacao butter comes in chunks and this makes it easy.
*1/4 cup natural peanut butter ( or any nut butter)
* 2 TBSP raw honey
*1 1/2 tsp of vanilla
*Pinch of salt
Instructions-
Melt the cacao butter in double boiler, once completely melted turn off heat.
Add the rest of the ingredients- use immersion blender to blend thoroughly
Taste and see if its to your liking- if you want more peanut butter or salt add now
Using your chocolate dropper- start filling your molds.
Cool in fridge. Once hardened - pop out of molds and store in fridge or freezer! These can be stored at room temperature but I prefer them cold.
Let me know what you think of these bite sized, melt in your mouth treats!
