Peppermint Chocolate Donuts

I love this time of year for the baking- and combining the flavours of Christmas!
 
My new obsession is Baked Donuts!! They are so easy to make and super yummy too!
 
I used these pans and they work great Donut Pans
 
I love “upleveling” a recipe in ways that they are healthier and don’t compromise the taste!!

It has a mild peppermint taste!
I also made these low sugar by swapping out the white sugar for monk fruit! It’s sweeter than sugar so I used half the amount called for!!
 
 Ok so here’s my recipe!
 
In a bowl mix together
1.5 cups flour
1/2 cup sugar OR 1/4 cup monk fruit
1/2 cup Dutch Cocoa
2 tsp baking powder
1/2 tsp salt
 
In another bowl-
 
Whisk
2 eggs
1/2 cup sour cream OR Greek yogurt
6 tbsp of milk
2 tbsp melted butter
2 tsp vanilla
 
Combine wet ingredients into dry. Mix well.
At this point you can fill one donut tray and then add in 1-2 scoops of the Peppermint Chocolate collagen. This will keep half the batch just chocolate. Or feel free to add collagen in during the first mixing!
 
Using a tablespoon carefully fill each greased donut well.
 
Bake for 10-12 min at preheated 350 degrees.
 
Once cooled prepare glaze.
1.5 cup icing sugar
4 tbsp milk
2 tsp vanilla
Optional-
* I used 1 drop of Doterra Essential peppermint oil to up the mint taste!
 
Decorate if you wish. I did half with crushed candy cane!
